it was late in the evening and i was really bored and scrolling through my phone deleting random emails. then, all of a sudden, i saw an awesome quote about being in the present and how that’s the only real experience you have, and so if you’re thinking about the past or worrying about the future, well, you’re totally wasting the moment that actually exists that you’re in right now and the happiness of that moment!1
and i went wow that is so true and you know what, I really want to bake some cookies.
so, even though I didn’t have a chocolate chip cookie recipe that i was totally happy with, i decided to MAKE one. and guess what?
it turned out perfectly!
the cookies are fluffy, but they have a teeny bit of crunch too. They puff up a little (they aren’t the thin spread-out kind) and have a really nice depth of flavor because of the combinations of flours that I used. And, this entire recipe is so easy and quick to make, even though I started it at like 9:30 at night! it didn’t take long at all! the recipe I made was a super small version for testing, using only 1 cup of flour, and it only made like 12-ish small cookies, which really isn’t as much as it sounds… so the version I’m copying down is scaled up to twice as much because otherwise. your cookie batch will be SO tiny it will disappear in 10 minutes, especially if you have more than one person to eat them.2 (though i suppose this is not necessarily a bad thing…)

► you don’t even need to buy any specific and maybe3 disappointing flour mix because you make your own with only 3 flours, so it’s not a terrible hassle
p.s. so i made another batch of them the next day, because…. as i said there were rather few, & also i wanted to make sure they were just as awesome as the first time. only, unfortunately, i was a little bit (just a little bit) out of sweet rice flour, so the proportions got all discombobulated. the cookies were still good, but not great like the first batch. so i would recommend NOT replacing ~1/4th of your sweet rice flour with sorghum. [if anything, replace it with more almond flour, but really… the best idea would probably be to, uh… check and make sure you have enough ingredients BEFORE you start making cookies.]
THE RECIPE:
1 cup sweet rice flour4
1/2 cup almond flour5
1/2 cup sorghum flour6
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp xantham gum
1 tsp vanilla extract
very shy 1/2 cup sugar
1/2 cup avocado oil7
2 eggs
as many chocolate chunks or chips as you want (I used madhu)8
that’s it!!!!! a super simple and delicious chocolate chip cookie recipe that was fun to make and fun to watch baking on its little tray and even more importantly, fun to eat!

if you do have just one person, you could halve the recipe and get a very nice small batch that probably won’t make leftovers

do not substitute regular rice flour!!!!! sweet rice flour makes stuff hold together a lot more and it doesn’t have that disgusting “dusty” after-texture. it is a totally different item
adds depth of flavor and a bit of softness and texture
sorghum flour has a bit of a nutty but NOT overpowering taste which adds a lot to the whole cookie experience. it gives a far more well-rounded flavor going on that adds to the vibe of chocolate chip cookies where the cookie taste and texture and all that, being plain but delicious, is one of the most important parts. i would not imagine it’d be easy to substitute this with anything else and keep the depth of flavor, though you could make it up with almond or sweet rice and the cookies would probably stay together and be ok. but “ok” is not GREAT you know? (if you do replace it with anything, my guess is replacing it with the same amount of sweet rice flour would be the way to go)
or other oil with a mild flavor
the chocolate is dairy free, but from a facility that uses dairy in other things
